Come join us at Northstar Village on Sunday September 7, 2016, to try our entry in the Lake Tahoe Autumn Food & Wine Festival’s food and wine pairing competition. We’re bringing a surprise this year, one most will not expect. Last year, for the pairing competition, we made a custom chocolate to pair with Powell Mountain’s Pinnacle wine. The pairing was amazing, but we missed out on any awards. Most of the attendees came to try our pairing for a dessert, after the voting had officially closed. This year, we’re bringing a new strategy to overcome this miscalculation.
Since we are in the early planning stages of opening a second food based business, this one featuring smoked meats. We decided to create a smoked meat slider as our entry for the competition. After trying several slider variations with Albatross Ridge’s 2012 Pinot Noir ‘Cuvée Vivienne’, including:
Beef Chuck Short Rib Sliders – Thinly sliced, smoked beef chuck ribs, onion peach jam and a gorgonzola sauce, served on a sour baguette.
Pulled Pork Sliders – Smoked pulled pork, a vinegar/spice finishing sauce and a fresh pear/apple slaw, served n a sweet roll.
Maple Bourbon Pork Belly Banh Mi – Smoked pork belly, sliced cucumber, sliced jalapeno, pickled daikon, a sprig of cilantro and a housemade garlic aioli, served on a sweet baguette.
We decided on our Maple Bourbon Pork Belly Banh Mi as our food pairing entry. This pairing, brings a unique experience of flavors and sensations to the palate.
